Play your Part:

As CDP you should takes care of the daily food preparation and duties assigned to your section through the Sous Chef to meet the standard and the quality set by the Senior Executive Chef

General Responsibilities

  • To promote efficiency, confidence, courtesy, and an extremely high standard of social skills.
  • To generally promote and ensure good inter-departmental relations.
  • To always display a pleasant manner and positive attitude and to promote a good company image to guests and colleagues.
  • To always demonstrate pride in the workplace and personal appearance when representing the company thus identifying a high level of commitment.
  • To always adhere to Company and Hotel rules and regulations.

Operational

  • Responsible for tasting meals before they are served to customers, to ensure that it done accordingly to the set standard by the Senior Executive Chef

  • The Sous chef role must possess the ability to pay attention to details, Sous chef should be aware of the

  • specific ingredients and their measurement

  • Ensure consistent and smooth running of food production

  • Ensure effective stock purchase, its receipt and storage

  • Ensure that working areas are always kept clean

  • Assist other kitchen staff as need arises

  • Supervise performance of kitchen staff to ensure proper activity

  • Perform other administrative tasks as will be communicated by superiors

  • Ensure that required standards are adhered to in the production and preparation of food – in quality quantity and safety

  • Ensure all complaints, inquiries, and suggestions by customers are attended to accordingly

  • Give appropriate support or guidance to members of kitchen when needed

  • Resolve possible disputes within the kitchen and report any unresolved

  • Ensure all dishes are prepared according to specification and served at the correct quality, portion, size and temperature

  • Partly responsible for the preparation of kitchen cleaning rosters and the supervision of cleaning schedules

  • Ensure that the kitchen staff work harmoniously to ensure timely production of food quality

  • Monitor the quality and quantity of food prepared

  • Report the need for maintenance to appropriate staff

  • Works hands on towards the timely kitchen preparations for all meal service periods

 

Administrational

  • To ensure that the standards required by Law and by Dubai Holding Entertainment Management are always maintained in the areas specified above

  • Assist in recruiting, hiring chef’s vacancies

  • To ensure statutory training is carried out relating to fire, hygiene and health and safety

  • Marinating the food cost target

  • Reduce the food wastage to the minimum percent

  • Completes cleaning, opening & closing checklists when instructed by senior colleagues

  • Placed orders of products and ingredients and ensure all recording inventories/ stock-takes are recorded

  • Prepares duty schedules in the kitchen operation

  • Maintain good record for staff training and development

Essential:

  • Male or female with a pleasing personality
  • Willing to work in a team
  • Able to deal with people different nationalities and religions At least 5 years in the Kitchen.
  • Completed kitchen apprentice or chefs training courses for at least one year At least two years in a five star hotel
  • Good communicator
  • Leadership
  • Team player
  • Take on responsibility 

Desirable:

  • Demonstrate a passion for quality and cooking
  • Able to deal with people of different nationalities and religions
